The halibut is one of the largest flatfish the world growing to a whopping 4m and weighing in at 320kg! Living on the sea floor, it is not a fussy eater and will ambush and eat almost anything, swimming up to the mid water to take fish. Halibut are slow growing – females do not reach sexual maturity until 11 years old.
